I was looking for some weekend brunch ideas that don't include bread when I stumbled upon this tasty recipe. Tastes amazing and looks amazing too!
I recommend watching a video and following detailed instructions on how to achieve creamy scrambled eggs properly.

Instructions
Prepare eggs and bacon!
Step 1
Melt the butter in a pan and add well-beaten eggs.
Cook the eggs on a low-medium heat steering often until you reach a creamy consistency. Salt and pepper to taste..
NOTE: if you have no or little experience on how to properly cook scrambled eggs - take a look at the video attached.

Cook the bacon in a pan on low heat to your liking (more or less crisp), and lay down on a paper to get rid of the access fat.
Prepare pico de gallo!
Step 3
Mix all the ingredients together in a bowl. Taste and adjust the seasonings if necessary. If you wish you can add some olive oil as well, but I feel like there is no need to add additional fat to an already hefty (but delicious) meal =).
Make sure to drain some of the tomato juice in order not to get your tortilla soggy.

Asemble!

Lay tortilla down.
Put some scramble eggs.
Add cooked and sliced bacon.
Add cheddar. If you have it you can melt it a little with a kitchen torch, but this is really optional. =)
Add pico de gaio.
Step 6
Wrap in a burrito and serve with some additonal pico de gallo asside.
