Ingredients

2 cansblack beans

2cans corn

1 candiced tomatoes with green chiles
drained
1can diced tomatoes
drained
2 cupsbrown rice
cooked
8 wedgescheese
1 cupunsweetened almond milk
1 cupfrozen okra
diced, optional
2 teaspoonschile powder
1 ½ teaspoonscumin
1 ¾ teaspoonskosher salt
1 teaspoonflour
or corn starch
¼ cupParmesan cheese

Instructions
Step 1
1. Preheat the oven to 365°F (yes, that temperature is correct). Spray a 9 × 13-inch baking dish lightly with oil/cooking spray.
Step 2
Place the chicken, beans, corn, rice, Ro-tel, and tomatoes in the dish and mix together.
Step 3
Put the cheese wedges, milk, okra (if using), chili powder, cumin, salt, and flour/corn starch in a blender and blend well until completely creamified. Blend the very soul out of it so no bits of okra can be seen!
Step 4
Pour the contents of the blender into the baking dish and stir it all in with the other ingredients. Sprinkle the Parmesan (if using) over the top and bake for 40 minutes. Let sit for a few minutes before serving.
Step 5
Serve with your choice of shredded cheese, diced green onions, sour cream, sliced avocado, and/or tortilla chips.
