Microwave Butterbean and Bacon Soup

Super simple and tasty. This simple soup is packed with flavour and uses any leftover rashers of bacon to make a simple soup made in minutes in the microwave.

Instructions

Step 1
Add the onions, butter and bacon to a microwavable bowl. Cover and heat on a high power for 4 minutes stirring halfway.
Step 2
Dissolve the vegetable stock cube with 500ml of boiling water.
Step 3
Add the butter beans, green beans and stock to the bowl and stir to combine. Cover and cook on high for 15 minutes.
Step 4
With a slotted spoon remove 1 spoonful of the soup and set aside.
Step 5
Using a stick blender or mixer puree the mixture. Add the reserved mixture and stir in the cream. Season to taste with pepper.
Step 6
Pour into four bowls and garnish with parsley.
