Crispy mashed potato croquettes

I make extra mashed potatoes just to have leftovers to make these crispy potato pancakes. So yummy!

Instructions

Step 1
Add vegetable oil to a deep pot and heat over medium high heat
Step 2
Mix all ingredients together (except panko)
Step 3
Scoop potatoes using an ice cream scoop and press into the Panko to coat well.
Step 4
Fry on each side 1-2 minutes
Step 5
Drain on paper towels and top with sour cream, fresh parsley, green onions and/or chopped bacon
