Instructions

Step 1
To shredded romaine lettuce add 2/3 cup of shredded fresh parmesan cheese

Toss salad with 2/3 cup roasted pine nuts and dressing.

COOK'S TIP:
Step 4
Pine nuts burn easily!! Brown them on top of the stove in a very lightly oiled frying pan. Never take your eyes off them until they are golden then remove them from the pan to stop further browning.
Step 5
To get nice crispy,crunchy romaine, soak the leaves in cold water for at least 15 minutes then dry in a salad spinner after soaking. Put the leaves in a plastic bag and refrigerate until ready to use. Shred the romaine using a knife as you would with cabbage.
