The Best Vegan Gravy
Flavorful, strong taste of thyme; good on a bland base such as seitan, toast or potato. Blending thickens gravy considerably. Makes 3 cups, or 24 2-tablespoon servings.

Instructions
Step 1
Heat oil in large skillet. Add onions, and sauté until soft and translucent. Add mushrooms and garlic, and continue to sauté until all is very soft.
Step 2
Meanwhile, in a small bowl, mix the flour, nutritional yeast, thyme and a little of the milk together to form a paste. Add the rest of the milk to the paste, and whisk until well-combined and free of lumps.
Step 3
Add the flour mixture to the skillet along with the soy sauce, if using, and broth. Whisk together and bring to a boil, continuing to whisk constantly.
Step 4
Let the gravy mixture boil for a few minutes until it thickens. If you prefer a smooth gravy, immersion blend at this point. (Or cool a bit and carefully transfer to a blender to emulsify.) Add black pepper and salt to taste. Reheat as needed and serve.
