Heat griddle to medium heat

whisk almond milk, pumpkin, eggs, vanilla and pumpkin pie spice together in an 8x8 baking pan. Dip bread into mixture, let sit for a minute to soak up the goodness, then place on greased griddle. Once lightly browned, flip

Mix cottage cheese with stevia to sweeten if desired. Top each two slices of french toast with .25 cup cottage cheese, 1 Tbsp chopped pecans, syrup and a dash of cinnamon
