One Pot Creamy Lemon Orzo & Chicken

One pot meals are the best. Here’s a simple creamy lemon orzo & chicken perfect for when you want dinner on the table in under 30 minutes. I used what I had available in my fridge this evening but there are so many things you can add to elevate this dish such as sun dried tomatoes, spinach, asparagus, broccoli, diced shallots, diced onions, etc. The possibilities are endless :)

Instructions

Step 1
Season both sides of the thin sliced chicken breasts with salt & black pepper to taste + a generous coating of garlic powder, onion powder & paprika
Step 2
Add about 2 tablespoons of oil to a skillet over medium high heat
Step 3
Cook the thin chicken breasts for about 3 minutes on each side then set aside on a plate. While the chicken is cooking mince the 3 garlic cloves
Step 4
Turn heat down to medium and add 2 tablespoons of butter. Once butter is melted add in 3 minced garlic cloves and sauté until fragrant. Once garlic is fragrant squeeze in the juice of 1 lemon
Step 5
Next add 2 cups of dry orzo, salt & black pepper to taste + about 1 tsp of garlic powder & onion powder then sauté for about 3 minutes
Step 6
Stir in 3 cups of chicken broth & 1/2 a cup of heavy cream. Let simmer for about 3 minutes then turn the heat down to low, stir in 1/3 cup of freshly grated parmesan cheese, add the chicken breasts on top of the orzo, cover with a lid & cook an additional 12-15 minutes or until almost all of the liquid is gone & the orzo is cooked through
Step 7
Top with more freshly grated parmesan, fresh parsley, lemon slices & red pepper flakes if desired. Enjoy!
