Instructions
Step 1
Mix sugar with egg yolk till the sugar dissolves completely
Step 2
Put the cream on medium heat till it boils
Step 3
While stirring add the cream to the egg yolk
Step 4
Add the mix to small bowls through a mesh stariner (to remove any chunks of cream or sugar)
Step 5
Fill a tray with water and put the bowls in it then on a 160°C put the tray in the oven till the mixture hardens
Step 6
Put the bowls in th fridge for 24 hours
Step 7
Before serving spray a layer of sugar and caramelise it using a kitchen butane torch
