Instructions
Step 1
Stir fry onions, meat, garlic, and ginger until the meat is brown and onions are starting to soften
Step 2
Add mushrooms and lotus root and stir fry for 2 minutes more
Step 3
Add water, tsuyu soup base and curry roux blocks. Simmer for 5-7 minutes, stirring often.
Step 4
Make soft boiled eggs by simmering water and cooking for 6 minutes
Step 5
Boil frozen udon noodles until warmed through and drain
Step 6
Pan fry zucchini until browned, season with salt to taste
Step 7
Add udon noodles and zucchini to the soup and boil for 2 minutes more
Step 8
Serve with sliced green onions and a soft boiled egg
