Epraxs for dinner yesterday they were so delicious. I never make them exactly the same, every time I make them I add different ingredients. Don’t be afraid to make changes to any recipes, I usually work with what I have in my fridge. I stuffed onions, zucchini and grape leaves, of course you can also stuff peppers, tomatoes, eggplant or potatoes and make it your own.

Ingredients

Rice filling
2 cupslong grain rice
wash
1 poundground beef
1tomato
medium, chopped
1onion

½ cupparsley
chopped

take out the seeds and chop
1 tablespooncitric acid
1 tablespoonchicken bouillon
½ tablespoonsalt
1 teaspoondried mint
1 teaspooncumin
1 teaspooncoriander
1 teaspoonblack pepper
1 x 6 ozcan of tomato paste
¼ cuppepper paste
½ cupolive oil
⅓ cuppomegranate molasses
1 tablespoonolive oil
for the bottom of the pot
3Potatoes
for the bottom of the pot
1 teaspoonsalt
for the top
1lemon
The juice of, or 2 if you like them sour
3 cupswater
hot, boiling
Instructions
Step 1
1. Cut both ends of the onions off, Make a lengthwise cut into each onion from the top to root end, slicing only halfway through to the middle of the onion, peel thin put them in the microwave for 2 minutes (This will make it easier to separate the layers.) after they come out the microwave start separating the layers.
Step 2
2. Cut both ends of the zucchini off, hollow out the middle and wash.
Step 3
3. Make the rice mixture by washing 2 cups of rice until the water runs clear. Drain and put it in a large bowl, then add the ground beef, tomatoes, onions, parsley, garlic, jalapeños, citric acid, all the seasonings, olive oil, pomegranate molasses, tomato paste and pepper paste then mix until well combined.
Step 4
4. Stuff all the onions, zucchini, and roll all the grape leaves
Step 5
5. To the bottom of a pot add the 1 tablespoon of olive oil and sliced Potatoes to cover the bottom of the pot. Then start layering all of the stuffed onions, zucchini and grape leaves.
Step 6
6. Put the pot on high heat sprinkle one teaspoon of salt on top, then drizzle the juice of one lemon, put a heavy plate or a clay pot dolma lid on top. Then pour the boiling hot water right on top and cover the pot.
Step 7
7. Boil on high for 15 minutes then reduce the heat to really low and let them cook for about 1 and 1/2 hours or until cooked, Then flip the pot into a large plate and enjoy!!
