Vegan pancake that takes minutes to prepare. My variation of an Indian Chilla but with a bit of baking powder for puffiness and black salt for a slightly eggy flavor.

Instructions
Step 1
Mix the Besan, baking powder and spices, breaking up any lumps in the flour. Mix in water to make a batter of pouring consistency (add a dash more water if needed).
Step 2
Mix through the chopped vegetables. Heat fry pan with a dash of vegetable or olive oil.
Step 3
Give the batter a quick mix and pour into pan. Use a spatula to even out distribution of veggies.
Step 4
Cook until bubbles appear in the batter. Flip and cook on second side until cooked through.
Step 5
Serve with a mint or coriander chutney, or sirarcha and kewpie mayo.
