Instructions
Step 1
Toast pone nuts by placing them in a hot nonstick skillet and stirring frequently over medium-high heat until toasted, about 2 minutes.
Step 2
(Be careful not to let them burn.)
Step 3
Remove from heat and set aside.
Step 4
Sprinkle fish with cornmeal.
Step 5
In a large nonstick skillet, melt butter over medium heat.
Step 6
Add fish and saute until cooked through, about 2 minutes on each side.
Step 7
Remove fish from the pan and place on individual serving plates.
Step 8
Add shallots and peppers strips to the hot pan and saute until fragrant and slightly wilted, about 2 minutes.
Step 9
Then add vinegar and stock, increase the heat to high, and boil until liquid is reduced by half.
Step 10
Pour over fish, top with pine nuts, and serve hot.
