Step 1
Make Golden Syrup Caramel Sauce: Place butter, sugar, golden syrup and 2 1/4 cups cold water in a 6cm-deep, 27cm (base) heavy-based frying pan over low heat. Stir for 5 minutes or until sugar has dissolved. Increase heat to medium. Bring to the boil. Remove pan from heat.
Step 2
Sift flour and cardamom into a bowl. Using your fingertips, rub in butter until mixture resembles fine breadcrumbs. Stir in sugar. Make a well. Pour in milk. Using a wooden spoon, stir to form a soft sticky dough.
Step 3
Return caramel sauce to a simmer over medium-low heat. Carefully drop heaped tablespoons of dumpling mixture into syrup. Cover with a tight-fitting lid or 2 layers of foil. Reduce heat to low and cook for 15 minutes or until dumplings are puffed and cooked through and sauce has thickened. Serve dumplings immediately with cream.
