Instructions

Step 1
In large pot, heat half of oil over med-high heat. Add sausage and brown both sides. Transfer to bowl and set aside.

Add remaining oil to pot. Add onion, carrots, and celery. Cook until softened, 4-5 minutes. Stir in garlic, rosemary, bay leaf, and tomato paste. Cook until fragrant, about 1 minute. Add lentils, stock, and 4 cups water. bring to boil, then lower heat to simmer. Cook until lentils are tender - 30 minutes.

Step 3
Stir in sausage, greens, salt, and pepper. Cook until greens are wilted, 3-4 minutes. Top with parmesan.
