Instructions

Soy Glaze

Step 1
Combine lightly crushed garlic, ginger, mirin, and sake in a saucepan over medium heat. Bring to a boil, reduce heat to low, and reduce the volume by half (about 2-3 min).

Step 2
Add soy sauce, sugar, and black pepper and cook until it coats the back of a spoon (about 2 min).

Remove from heat and leave to cool to room temperature.

Wings

Step 4
In a bowl, season potato starch with salt and black pepper.

Heat oil to 320 F in a pot. Coat wings in potato starch, making sure to squeeze the starch into the wings.

Fry wings until they are just starting to turn golden (about 3 min). Remove and let rest on a wire rack for 10 minutes.

Heat oil to 375 F and fry wings for a second time until golden brown (about 2-3 min).

Transfer wings to a bowl and toss with the soy black pepper glaze. Enjoy!
