Step 1
Peel onion, cut in half and press cloves into onion.
Step 2
Place silverside in the cooking container fat side up, then the remaining ingredients, place over a high heat, cover, when liquid starts to boil, reduce heat until you achieve a slow simmer for 1 hour for the first 1 kg of meat plus 30 minutes for each additional 500 grams. Top up water if required to keep the silverside “ floating”. If excess fat floats to the top skim off with a spoon.
