ARRABBIATA ORZO SOUP

ARRABBIATA ORZO SOUP A very simple, quick-to-make tomato soup based on a traditional Italian arrabbiatta sauce (tomato, chilli and garlic). I like to make this when I have very little time for prepping, but want something filling and warming for lunch. I love orzo in soup because, as well as thickening it up, it adds great texture and filling power. CALORIES PER SERVING: 243 PREP TIME: 5 MINUTES COOK TIME: 20 MINUTES

Instructions

Step 1
1. Put the garlic, chilli and tomatoes in a food processor and whizz until completely smooth.
Step 2
2. Pour the tomato mixture into a large saucepan, add the vegetable stock, salt and pepper and bring up to a fast simmer.
Step 3
3. Add the orzo and simmer for 15-20 minutes until the orzo is cooked through, stirring regularly to ensure that it doesn't stick to the bottom of the pan..
Step 4
4. Serve with basil leaves, a scattering of grated cheese and a few grinds of black pepper.
