Instructions

Step 1
Preheat oven to 400 degrees
Step 2
Butterfly and pound out tenderloin to 1/4 inch thickness and salt and pepper both sides
Step 3
In a small bowl, combine goat cheese, cream cheese, sun-dried tomatoes, spinach, thyme, rosemary, and garlic powder
Step 4
Spread goat cheese mixture over the tenderloin and wrap tightly
Step 5
Optional: Wrap the stuffed tenderloin in strips of bacon
Step 6
Tie the tenderloin with kitchen twine to keep from opening while in the oven
Step 7
Cook in the oven on baking sheet for 30-40 minutes
Step 8
Once cooked slice with a very sharp knife and remove the twine
