These are some amazing sweet potato tapioca balls that are chewy, sweet, a bit crunchy and really easy to make at home!

Instructions

Step 1
Peel and chop sweet potatoes into large chunks
Step 2
Steam sweet potatoes for 10 mins or until soft
Step 3
Mash sweet potatoes with a ricer or a fork
Step 4
Add sugar, tapioca flour, and corn starch and mix until it becomes a dough — add more tapioca flour if necessary
Step 5
Roll your dough into logs, cut them into small pieces, the roll them into balls
Step 6
Fry on low heat for 1 minute then fry on medium heat for 4 minutes or until golden brown
Step 7
Drain and let cool on a wire rack and then enjoy!
