Instructions

Step 1
Butterfly the turkey breast by slicing it in half lengthwise without cutting all the way through. Then place some plastic wrap on top and hit it with a meat mallet or something heavy to thin it out. In a separate bowl combine melted butter, seasoning, and herbs. Brush half of the butter mixture inside the turkey breast reserving the other half for the outside. In a separate bowl combine softened cream cheese, spinach (be sure to squeeze out any excess water) parmesan cheese, and garlic. Spread this mixture on the inside of the turkey breast then roll it up tightly and tie it shut with butcher twine. Brush the outside of the turkey breast with the remaining butter then bake at 350° until turkey breast reaches 165° my 3 pound turkey took about 1 hour and 30 minutes. Rest it for 20 minutes before slicing.
