Instructions

Step 1
Prepare all the vegetables in one. Wash and clean them before cutting them in not too much small pieces. Place them in a large bowl while preparing them.

Step 2
Place all the vegetables in a large pan including the peas and switch on your stove on medium heat. Cook the vegetables for about 20 minutes with a lid on. The vegetables have to be a little soft. Once the vegetables are soft enough, remove the pan from the heat.

Step 3
Add salt, pepper, a couple of spoon of breadcrumbs and another two of grated parmesan. Mix the vegetable and let them rest for fifteen minutes so they can become warm.

Step 4
Add the eggs, two more spoons of grated parmesan and breadcrumbs. The mixture needs to be a little wet, so keep adding breadcrumbs if necessary. This might depend on how big the eggs are and how much water the vegetables release during the cooking.

Step 5
Put some parchment paper in a cake pan (Ø 24cm more or less). Ease down the mixture of vegetables in the cake pan and spread it so it can be compact and flat.

Add sliced mozzarella on top of the vegetables so you cover all the surface. You can add some more grated parmesan if you fell like to do so.

Step 7
Cook the vegetables cake for 30 minutes more or less. When the cake is done, you will see a nice brown/gold crust on top. Switch off the oven, remove the side of the cake pan and let the cake cool down completely while sitting in the oven. After some time you can warm up the vegetables cake again before eating it.
