Baked corn on the cob

There’s something about the fresh, sweet, buttery flavour of corn on the cob that makes it the perfect comfort food for any season. Wrap these cobs in foil before oven baking, for a fuss-free way of enjoying these moreish delights.

Instructions

Step 1
Preheat the oven to 200°C/400°F/gas mark 6.
Step 2
In a small bowl, stir together the vegan butter, garlic, parsley, lemon zest and sea salt.
Step 3
Cut 6 pieces of kitchen foil, large enough to wrap around a cob, then place a corn cob in the centre of each. Spread most of the butter mix evenly onto each cob, reserving some for later, then wrap the foil securely.
Step 4
Place the foiled cobs in a roasting pan, then bake in the oven for 30–35 minutes until tender.
Step 5
Fold back the foil, then place the under a hot grill (broiler) for a minute or two until slightly charred. Slather with the remaining butter and serve.
