Sweet and Spicy Quorn Bites

I like to use these as a vegetarian alternative to wings, very messy to eat but very tasty! I tend to serve these on one plate and share them with my partner as a snack. Could be served with rice and veggies to make a full meal. Other brands of vegetarian nuggets can be used, I just like the Quorn nuggets.

Instructions

Step 1
Preheat oven to 200°C. Place the Quorn nuggets on a tray and cook for 22 minutes (or according to packet instructions).
Step 2
While the nuggets are cooking, in a small saucepan or frying pan, mix together the cornstarch and water until combined. Add in the honey, ginger, garlic, chili powder, chili flakes and soy sauce. Stir until all the ingredients in the pan have combined, and set aside.
Step 3
In a small bowl or ramekin, combine the mayo and coriander. Place the bowl in the middle of a large plate.
Step 4
When the nuggets have 10 minutes left, place the saucepan with the glaze mixture on the hob on a medium high heat. Bring the mixture to a simmer and stir frequently until the mixture becomes thick and glossy. This should take around 6-8 minutes. Once the glaze is ready, set aside until the nuggets are cooked.
Step 5
In a large mixing bowl, toss the nuggets in the sauce until each one is fully coated. Place the nuggets on the plate around the dip, garnish with the sesame seeds and spring onion and tuck in!
