Ingredients
6 servings
⅓ cupraw cashews
2 tablespoonshemp seeds
6 ouncesfirm silken tofu
3 clovesgarlic
large, or to taste
2celery stalks
medium, chopped
½ cupwater
¼ cupfreshly squeezed lemon juice
½ teaspoonwhite miso
2 teaspoonsdijon mustard
4medjool dates
regular, pitted
½ teaspoonkelp granules
2 tablespoonsnutritional yeast
freshly ground pepper
to taste
Instructions
Step 1
Combine all ingredients in a high-powered blender and process until the mixture is the consistency of conventional Caesar dressing, adding more water or some non-dairy milk if needed to adjust consistency. Taste and adjust seasonings and refrigerate until ready to use.
Step 2
Makes about 2 1/2 cups.
