APPLE + MISO + DATE CRISP
Miso might seem like an odd ingredient for a crisp, but the first time I had miso in a dessert (a chocolate chip cookie) I was completely blown away. It was so rich and so addictive, I discovered that when miso is hidden in baked goods, it somehow adds a buttery taste without the addition of butter. After this revelation, I was inspired to come up with a recipe for an apple and date crisp with sweet miso, because I knew that the apples would embrace the miso, and the miso would add that rich, buttery flavor while remaining dairy-free. Crisps are an easy way to feed a crowd and are a great vehicle for using the best seasonal fruit. Also, the leftovers are always just as good and sometimes even better. You can find apples year-round, but feel free to make this with pears or any stone fruit.

Ingredients

peeled, cored, and thinly sliced
7dates
pitted and diced
¼ cupcoconut palm sugar
2 tablespoonsalmond flour
0.5lemon
Juice of
½ teaspooncinnamon
½ cupcoconut oil
½ cupwhite granulated sugar
or coconut palm
1 cupoat flour
½ cupalmond flour
¼ cupsweet white miso
vanilla ice cream
for serving
Instructions
Step 1
Preheat the oven to 350°F.
Step 2
Put the apples, dates, coconut palm sugar, almond flour, lemon juice, and cinnamon in the baking dish and toss to combine. Set aside while you make the topping.
Step 3
In a food processor, combine the coconut oil, sugar, oat flour, almond flour, and miso and pulse several times until you have a crumbly, uniform mixture. Spread the mixture evenly over the apples and bake for 45 to 50 minutes. Allow to cool for about 10 minutes before serving. Serve warm with a scoop of vanilla ice cream.
