Make cordial:
Step 2
Heat vinegar and ginger to almost boiling. Steep 24 hours at room temperature. Strain pulp, pressing to get the most liquid. Adjust liquid to 2/3 cup. Add sugar. Heat liquid, stirring until sugar dissolves. Bottle and store in the refrigerator.
Step 3
To make a drink, dilute using 2 oz per 10 oz of water, seltzer water or lemonade. Add a shot of booze if desired.

Berry (Blueberry, blackberry, strawberry, raspberry) shrub, use 1 1/2 cup berries instead of (or in addition to) ginger. Reduce ACV to 2/3 cup for blueberries or strawberries, or to 1/2 cup for raspberries.

Apple shrub: use 3 med/large apples, shredded, 2/3 cups sugar, 1 cup vinegar
Step 7
Plum, Cherry: 1/2 cup, 1/2 cup, 1/2 cup

Peach: 1 cup fruit, 1/2 cup sugar, 1/2 cup ACV
Step 9
Lime: Equal weight of limes and sugar. Juice limes, mix juice and rinds with sugar, stir to mix, let stand 24 hours. Add vinegar to taste, using guidelines above to estimate. Let stand a few days then strain out rinds.
Step 10
Rhubarb: Equal parts rhubarb and sugar. As limes, above
