Instructions
Step 1
Heat a large saucepan/stockpot to medium heat. Add oil and vegetables. Saute for 3 - 4 minutes.
Step 2
Add garlic and saute for another 1 - 2 minutes.
Step 3
Add ham hock, stock, and enough water to mostly cover the ham hock.
Step 4
Simmer for approx 45 min
Step 5
Add lentils and cook for another 45 min (lentils should have 'dissolved' and formed a thick soup consistency)
Step 6
Ready to serve - but better if left to rest overnight with the bones in.
