Pizza Calabrese With Spicy Nduja

Instructions

Step 1
Preheat the oven to 220. Put a large baking tray in the oven (this will stop the bottoms going soggy)
Step 2
Add the dried yeast to a large bowl with 100ml of warm water and 1 tsp sugar. Give it a good mix up and set aside for 5-10 minutes for it to develop.
Step 3
Peel and finely chop the garlic. Add to a bowl with the tomato paste and a pinch of salt, pepper and sugar. Add 4 tbsp of cold water and stir together.

Drain and pat the mozzarella, tear into bite size pieces

Deseed the pepper and slice into thin strips. Slice the red chillis. Pick the basil leaves from their stems and break the N'duja into small bite size pieces.
Step 6
Add the pizza base mix to the bowl with the yeast. Gradually add up to 75ml of warm water (you may not need it all) gently mix until a sticky dough ball has formed. Tip the dough ball onto a floured work surface and cut into 2. Toss each dough ball into a light dusting of flour until coated, round the ball as you go.
Step 7
Press each dough ball in the centre and gently push outwards with your fingertips, leaving the rim of the pizza untouched to form a crust. keep going until your base is slightly smaller than a side plate. Heat a large dry wide based pan over a high heat.
Step 8
Once hot, carefully add the pizza base to the pan, pushing the dough to the edge to help shape the crust. Add 1/2 of the tomato sauce to each pizza and spread evenly with the back of a spoon. Cook the pizza for 3-4 minutes until the crust has started to puff then remove the heated trays from the oven and slide the pizza on.
Step 9
Top them with the dried oregano, mozzarella, N'duja, chilli, sliced pepper and basil leaves. Drizzle the crusts with olive oil and put in the oven for 12-15 minutes.
Step 10
Serve the pizzas with the rocket to the side.
