12 ozsweet potatoes
6 cupsbroccoli
4 Tbspbreadcrumbs
whole wheat
2 Tbspflaxseed meal
2 Tbspparmesan cheese
paprika
garlic powder

Chili-Lime Mayo
Instructions
Step 1
Cut sweet potatoes into fries, with or without the skin. Roast sweet potato fries and broccoli. Weigh the sweet potatoes and broccoli and divide by number of servings.
Step 2
Preheat oven to 350 degrees.
Step 3
In a small bowl, combine breadcrumbs, flaxseed meal, Parmesan cheese, paprika, garlic powder and onion powder; set aside.
Step 4
In another bowl, beat the egg white. Set the bowl next to the breadcrumb mixture.
Step 5
Rinse and dry the chicken. Cut into small chunks and sprinkle with salt. Dip the chicken into the egg white and then toss in the breadcrumb mixture until completely coated. Spread the nuggets out onto a baking sheet lined with parchment paper. Cook for 20 minutes, flip and cook an additional 20 minutes. Weigh the chicken and divide by the number of servings.
Step 6
Combine all the ingredients together for the Chili-Lime mayo. Enjoy the chicken nuggets warm with roasted broccoli and sweet potatoes on the side. Use 1.5 Tbs. of the Chili-Lime Mayo per serving as a dip for your fries and nuggets.
