Instructions
Step 1
Whisk together the mochi ingredients until smooth.
glutinous rice flour70 grams
corn starch20 grams
sugar15 grams
neutral flavored oil1 ½ tsp
coconut milk130 grams

Steam the mochi mixture for 20 mins or cook in the microwave at 1 minute increments for a total of 2-3 minutes (until the middle of the mochi is no longer liquid and white).
Step 3
Let the mochi cool before handling.
Step 4
Knead the mochi until it is smooth and bouncy in texture.
Step 5
On your rolling surface, lightly coat with glutinous rice flour.
Step 6
Roll out the mochi until it’s thin. Roll it out until it is thin enough to wrap around a mango without ripping.
Step 7
Prepare the mango by cutting one half of a mango by slicing alongside its seed.

Use a spoon to scoop the mango flesh from its skin.
Step 9
Dry the mangoes with some paper towels.
Step 10
Cut the mochi to fit your mango.
Step 11
Gently pinch together the edges of the mochi.
Step 12
Cut off any excess mochi.
Step 13
Enjoy immediately!
