If you find yourself with leftover mashed potatoes, try this recipe. An easy way to transform those leftovers into a delicious new dish. Great as a side dish or as a snack!

Instructions

Step 1
Preheat the oven to 350°
Step 2
Lightly spray a muffin tin with nonstick spray
Step 3
Mix all ingredients together in a bowl. With an ice cream scoop, scoop the mixture into a greased muffin tin. (It depends on how much leftover potatoes you had as to how many muffins this will make.)
Step 4
Bake at 350 for 20 minutes.
Step 5
Take them out and add more cheese on top, if desired, and bake 5 more minutes.
Step 6
Top with extra sour cream, chopped bacon, fresh parsley or chives
