White chocolate truffles
Great candy to make for candy gift giving. Can use a lot of different tppings, like seasalt and sanding sugar or chocolate sprinkles, or crushed peppermint would be great for Christmas.

Instructions
Step 1
In top of double boiler or heat proof bowl over simmering water, add butter and cream. After melted remove from heat and add white chocolate. I used Ghirardelli chips, but can use white chocolate bark or bar white chocolate, Coarsely chopped. Put back on heat and stir constantly until melted and combined. If mixture breaks, beat with hand mixer till smooth. Place in 8 inch square pan sprayed with baking spray. Chill for 20 or 30 minutes until slightly hardened.
Step 2
Use melon baller and scoop out balls and place in small paper canyon liner or mini muffin paper cups. Sprinkle with topping of choice.
