Instructions
Step 1
Heat 1 tsp of the oil from the tub of olives in a large saucepan over a medium-high heat
Step 2
Fry the beef for 5-8 mins, until golden
Step 3
Drain off any excess fat
Step 4
Pick the leaves from 3 sprigs rosemary, chop two-thirds of them and add to the pan
Step 5
Mix in the olives and tinned tomatoes
Step 6
Half-cover with a lid, then simmer for 30 mins, stirring occasionally, until the beef is tender and season to taste Meanwhile, peel and quarter the potatoes.
Step 7
Cook the potatoes in a pan of boiling water for 15 mins, or until very soft
Step 8
Season well, then mash with a splash of milk from your fridge
Step 9
Serve the stew and mash garnished with the remaining rosemary leaves
