CHEESY BEANY POTATO BAKE 😍 Can I get a YUM 🥳 It’s day 5 of another how to make 5 meals from a £25 shop at Aldi 🛒 This dish comes in at around 80p per portion.
This is the sort of meal we often make at the end of the week when we are using up bits and pieces in the fridge. It’s the sort of thing where you could switch up the veggies you use, you could use different beans and you could definitely change the cheese / add more cheese 🧀
If you’re more of a meat eater, then you could serve this up alongside some chicken for instance, however it is more than enough on it’s own as a main meal... it’s actually super filling 😋

1) Roast (200c fan) the chopped up potatoes and sweet potatoes on a large oiled tray, until cooked - about 40 minutes, tossing half way.
Step 3
2) Place the potatoes into a large (9x13) roasting dish, alongside your chopped peppers, courgette, kidney beans, tomatoes and spices/herbs, mix to combine. Bake for about 30 minutes or until the peppers and courgette are cooked to your liking.
Step 4
3) Top with cheese, I used a ball of mozzarella, but any cheese that melts would work well.
Step 5
4) Pop back in the oven for about 10-15 minutes to allow the cheese to melt and colour.
Step 6
5) Enjoy, with a salad on the side or a big bowl of guacamole - it works a treat!
