Instructions

For the batter

Step 1
In a bowl, mix the buckwheat flour and the coarse salt

Slowly add the water while stirring with a whisk. Keep stirring until there's very little to no lumps. Add an egg to the batter and stir.

Plastic wrap your bowl and let it sit in the fridge for 1 to 2 hours

Filling the galette

Step 4
Put a big amount of salted butter in a large flat skillet (ideally made for crepes), make sure you cook in high heat and add a ladleful of sarrasin batter. Let it sit for 1/2 minutes still in high heat, or until the corners caramelize.

Fill the galette with a slice of ham or two, then add the egg and top with wanted amount of grated swiss cheese. Add some salt and pepper

Fold the galette (in half/rectangle or the traditional square way that only lets you see the egg yolk). Remove from heat when the egg white is done

Add more butter to the skillet before cooking each galette
