Instructions

Step 1
Heat the oil in a liddable pan before adding the cumin seeds, cinnamon, cardamom, and bay leaves
Step 2
When the cumin crackles, add the onion and caramelise for 5 minutes before adding the salt, chillies, and garlic and ginger pastes, and cooking for another 5 minutes until golden
Step 3
Add the spice mix and stir, followed by the tomato puree and chopped tomato. Cook for 5 minutes over a moderate heat, adding water if necessary
Step 4
Add the chickpeas and simmer, lidded, until the oil rises, and the sauce thickens (add the garam masala during this time)
