Instructions
For Butternut Squash Purée
Step 1
1. Add diced squash, milk and bay leaf to pot
2. On medium heat, simmer 15-20 minutes until fork tender
3. Strain from squash from milk and save milk
4. Add squash to blender and about 2 oz of milk
5. Purée until smooth adding more milk if needed 6. Season with salt and pepper and set aside for plating
For Carrots
Step 2
1. Preheat oven to 500 degrees 2. Toss carrots with kosher salt and extra virgin olive oil 3. Place on sheet pant with nonstick spray 4. Place in oven and roast until slightly charred Set aside for plating
For Salmon
Step 3
1. Portion Salmon to 4 oz portions 2. Rub salmon with extra virgin olive oil 3. Season with everything spice
4. Heat sauté pan on stove top and add olive oil to coat the bottom
5. Sear salmon on seasoned side down and flip over
6. Place in 500 degree Dinah cooking until internal temp is 135
Assemble plates
