1.2 kg 0 Watermelon
1.2kgWatermelon
100g 0 Powdered sugar
100gpowdered sugar
1spring mint
200mlcarta blanca rum
3 lime

Instructions

Step 1
1. Freeze the watermelon in a container for at least 6 hours. Meanwhile put the sugar, mint and 200ml water in a pan, put over a low heat until the sugar has dissolved , swirling occasionally. then remove from the heat and set aside to cool remove the mint and chill until ready to use.
Step 2
2. Put the frozen watermelon in a blender along with the rum, lime juice 4 spoon of the sugar syrup, 100ml water and a pinch of salt. Whizz until there are no more chunks of watermelon remaining.
Step 3
3. Put some extra sugar and a pinch of salt on a plate. Run a wedge of lime around the rim of 8 glasses, then roll the rim of each glass on the plate to give a sugared edge. Pour the cocktail into the glasses, adding slices of lime and some mint of each, serve straight away. Use leftover sugar into drizzle over cakes or to poach summer fruit.
