Colorful quinoa salad, rich in fibers and proteins. Easy to pack in a lunch box to eat at work/school or outside.

Instructions
Step 1
Put the quinoa in the rice cooker with same level of water, and selct quick rice. I'm using 2/3 cup of quinoa
Step 2
Dice the tomato, cucumber, onion, pepper bell. Put them all in a big bowl.
Step 3
Wash the red kidney beans and pour them over.
Step 4
Add the quinoa
Step 5
Add lemon juice, coriander, garlic, salt and black pepper. Mix it all
Step 6
And ready to eat!
