GREEN CABBAGE COLESLAW

This light, modern variation of coleslaw is delicious and will retain its crunch, even if made in advance. Take care, however, when adding the chilli, as its heat will grow the longer the salad sits.

Instructions

Step 1
To prepare the cabbage, remove the tough outer leaves and wash in cold water. Cut into quarters, and remove and discard the tough white core of each section. Finely slice the green leaves and place in a large mixing bowl.
Step 2
Cut the carrots into fine matchsticks, about 5cm/2in in length. Mix into the cabbage with the finely sliced celery and spring onions. Mix in the herbs, chilli, lime juice and olive oil. Season to taste and serve when ready.
