Ingredients
4 servings
1 tablespoonextra virgin olive oil
8 ounceslean ground turkey
¼ cuponion
chopped
2garlic cloves
minced
¾ cupcrushed tomatoes
½ cupchicken stock
¼ cupfrozen corn
¼ cupblack beans
drained and rinsed
½ teaspooncumin
½ teaspoonchili powder
½ teaspoonpaprika
⅛ teaspoonpepper
⅛ teaspoonsalt
½ cupquinoa
cooked
½ tablespoonlime juice
2 tablespoonscilantro
chopped
3bell peppers
cut in half and seeded
Instructions
Step 1
Preheat oven to 350 degrees.
Step 2
Meanwhile, add oil to a large skillet.
Step 3
Add in ground turkey and saute until fully cooked, 4-5 minutes.
Step 4
Add in onion and cook for 2-3 minutes.
Step 5
Toss in garlic and cook for an additional minute.
Step 6
Stir in tomatoes, chicken broth, corn, beans, cumin, chili powder, paprika, pepper and salt. Bring to a simmer. Cook for 2-3 minutes until slightly thickened.
Step 7
Take off the heat and stir in cooked quinoa, lime juice and cilantro.
Step 8
Stuff peppers with the filling and place in a 9 x 13 pan. Cover with aluminum foil. Bake for 20-25 or until the peppers are tender and the filling is hot.
Step 9
Serve immediately.
