Chimichurri is a sauce originally from Argentina and Uruguay. The main ingredients of typical chimichurri are oil, water and vinegar, parsley, garlic, and other herbs, spices, and vegetables. It’s perfect for grilled meats, but it is also good with many different foods, including vegetarian — grilled vegetables, fresh goat cheese, fresh mozzarella and burrata, toasted bread, etc. Someone said that when you add fresh herbs chimichurri to the dish, it feels like you are dining in the middle of an herb garden. It is one of the easiest sauces to make, no matter what recipe you choose — traditional with parsley or creative with any of your favorite herbs or green vegetables (see Notes for ideas). This recipe makes 2 cups of sauce.
