Instructions
Step 1
Heat the oil in a pan and fry off the onion, garlic and ginger for around 2 minutes

Add in the curry paste and mix in

pour in coconut milk, and veg stock before bringing to the boil

Add carrots and tomatoes to the pan and cook for 8 minutes

Move mixture to a blender and blitz until smooth
