Ingredients

2 cupszucchini
finely grated, firmly packed it in, I used a food processor and did not drain or dry the zucchini
1 cupbrown sugar
1 ⅓ cupunsweetened applesauce
2eggs
2 teaspoonsvanilla
⅔ cupall purpose flour
1 cupcocoa powder
2 teaspoonsbaking soda
2 teaspoonsbaking powder
½ teaspooncinnamon
optional
½ teaspoonsalt
1 cupchocolate chips
or nuts
Instructions
Step 1
Preheat oven to 350°
Step 2
Spray a 9x13 inch baking dish with nonstick cooking spray
Step 3
In a bowl mix together the zucchini, brown sugar, applesauce, eggs, and vanilla.
Step 4
In a separate bowl whisk together the dry ingredients, add those to the zucchini mixture and stir together. Stir in the chocolate chips/nuts, if using
Step 5
Bake for 55 minutes. Let cool 20 minutes before slicing
