Instructions
Step 1
Roast the sweet potato at 200°C fan for 25 mins
Step 2
Fry the onion for about five mins
Step 3
Add the garlic, spices and a good squeeze of tomato puree and grey for one minute
Step 4
Add the beans and the stock, cook for about five mins then mash until about half the beans are mashed
Step 5
Fry the eggs, and serve on top of the beans, topped with coriander.
