Thai inspired crunchy cabbage salad

This salad is a refreshing and Thai inspired salad. It makes a fantastic lunch when topped with grilled chicken or shrimp but is also just great on its own! Also works with Romain but we preferred the crunch of the cabbage and it doesn’t get soggy the next day!

1 ½ ccabbage
shredded
1mango
diced
2green onions
sliced
½ ccashews
chopped
½ cmint
chopped
0.5red bell pepper
chopped
0.5Serrano
diced, small, optional
Dressing
Instructions
For the Salad
Step 1
Shred the cabbage - you can also use romaine or mix Napa cabbage and red cabbage.
Step 2
Dice and peel 1 mango
Step 3
Dice 1/2 red bell pepper - I used 3 small sweet peppers
Step 4
Chop green onions
Step 5
Rough chop mint
Step 6
Top with chopped cashews and optional Serrano if you like spicy

Dressing
Step 7
Add all the dressing ingredients to a small blender and blend till smooth (I use a blendjet portable blender, it’s perfect for dressings and a million other things) - you can use any nut butter you prefer, but we like peanut butter most. -you can also add chili oil or red pepper flakes if you want to add a little heat to the dressing
