Instructions
Step 1
Mix all ingredients in a large bowl with a whisk until fully incorporated.
ALTERNATE METHOD:
Step 2
Blend together red wine vinegar, capers and lemon juice on High for 5 seconds until capers are coarsely chopped.
Step 3
Combine the rest of the ingredients in a large bowl or a 16-quart Cambro container with the capers and red wine vinegar puree. Whisk all ingredients until fully incorporated.
Step 4
Add enough cold water until dressing is pourable.
Step 5
Taste with chef or manager.
Step 6
Cover, label and date.
