Instructions

Step 1
For crust: In a large bowl cut shortening into flour with a fork. Make a well in the center and add beaten eggs and half the water. Mix by hand and keep adding water until a dough forms. Knead the dough for 5-7 minutes, wrap in plastic and let rest for 30 minutes.
Step 2
In a large bowl, mix all meats and cubed cheeses. Set aside. In a second bowl mix mozzarella, ricotta, the six eggs and pepper until well combined. Pour the ricotta mixture into the bowl of meats and cubed cheese. Mix well. Set aside
Step 3
Butter a pie plate. Roll out 2/3 of the dough and place into the buttered pie plate. Pour cheese mixture into crust. Roll out the other 1/3 dough and place over the mixture. Seal the edges with a fork, pressing the edge to seal. Take some extra dough and make a cut of a star or any decoration you want. Brush the entire top with egg wash. Make four skits in top of crust for ventilation.
Step 4
Bake at 400° for 30 minutes. Lower heat to 350 and bake for 30 more minutes. Lower heat to 300 and bake for 30 more minutes. If not browned enough, bake for 10 more minutes. After about 15 minutes in the oven place tinfoil around edge to prevent over browning. Take off the last 30 minutes of baking.

Remove from oven to cool then chill for several hours or overnight and serve cold.
