Creamy Crockpot White Chicken Chili

Ingredients
6 servings
1 poundboneless skinless chicken breasts
trimmed of excess fat
1yellow onion
diced
2 clovesgarlic
minced
24 ounceschicken broth
low sodium
2 x 15 cans ozgreat northern beans
drained and rinsed
2 x 4 cans ozdiced green chiles
i do one hot, one mild
1 x 15 ozwhole kernel corn
cans, drained
1 teaspoonsalt
½ teaspoonblack pepper
1 teaspooncumin
¾ teaspoonoregano
½ teaspoonchili powder
¼ teaspooncayenne pepper
4 ouncescream cheese
softened
¼ cuphalf and half
sliced jalapenos
avocado
sliced
sour cream
fresh cilantro
minced
tortilla
shredded monterey jack cheese
or mexican
fresh cilantro
chopped
Instructions
Step 1
1. Add chicken breasts to bottom of slow cooker, top with salt, pepper, cumin, oregano, chili powder, and cayenne pepper.
Step 2
2. Top with diced onion, minced garlic, great Northern beans, green chiles, corn, and chicken broth. Stir.
Step 3
3. Cover and cook on LOW for 8 hours or on HIGH for 3-4 hours.
Step 4
4. Remove chicken to large mixing bowl, shred, then return to slow cooker.
Step 5
5. Add cream cheese and half and half, stir, then cover and cook on HIGH for 15 minutes, or until chili is creamy and slightly thickened.
Step 6
6. Stir well and serve with desired toppings.
